    Temper mustard seeds, curry leaves in oil. Add ginger-chilli paste and mashed potato. Season with turmeric, salt and lemon juice. Cool.

    Shape potato mixture into round balls slightly smaller than the pav bun.

    Make batter with besan, turmeric, salt and water. Dip potato balls and deep fry until golden and crispy.

    Slit pav buns, spread dry garlic chutney on one side and green chutney on the other.
