Knead semolina and maida with water into a stiff dough. Rest covered for 20 minutes.

Roll very thin. Cut small circles. Deep fry in medium-hot oil until puffed and crispy.

Blend mint, coriander, green chilli with cold water, lemon, black salt, cumin for the pani. Chill well.
