    Knead wheat flour, semolina, ghee and water into a stiff dough. Shape into round balls (baati).

    Bake baati in a preheated oven at 200C for 30 minutes until hard and golden, turning halfway.

    💡 Tip: Traditionally cooked over cow dung fire for authentic flavour.

    Cook all five lentils together in pressure cooker with turmeric. Prepare a ghee-tempered masala and add to dal.

    For churma: coarsely grind 3-4 baati. Mix with melted ghee, jaggery and cardamom.
