Knead wheat flour with water and salt into a stiff dough. Rest 20 minutes.

Mix sattu with mustard oil, ajwain, green chilli, salt and a little water to make filling.

Roast brinjal and tomatoes directly on flame until charred. Peel and mash with garlic, mustard oil, salt — this is the chokha.

Stuff dough balls with sattu filling, seal and bake over coal or in oven at 220°C for 25 minutes.
