The pride of North Indian winters — fresh red carrots slow-cooked in milk until reduced, sweetened with sugar and finished with cardamom, khoya and dry fruits.

Heat a wide heavy pan with ghee. Add grated carrots and saute on medium heat for 10 minutes.

Add milk and cook on medium heat stirring every few minutes until all the milk is absorbed — about 35-40 minutes.

Add sugar and khoya. Stir continuously as sugar melts and mixture comes together.

Cook until halwa leaves the sides of the pan and ghee separates around the edges.
