Mix besan, yoghurt, turmeric, salt, sugar and water to a smooth batter. Rest 2 hours.

Grease a steaming tray. Add eno to batter, mix quickly and pour into tray immediately.

Steam for 15-18 minutes until a toothpick comes out clean.

For tempering: heat oil, crackle mustard seeds, add curry leaves, chillies and a little water with sugar.

Pour tempering over dhokla, garnish with coriander and coconut. Slice and serve.
