Rinse poha in a colander under cold water. Drain completely and let rest 5 minutes - it softens on its own.
💡 Tip: Do not soak poha or it will become mushy.5 min -

Heat oil, crackle mustard seeds, add curry leaves and onion. Fry until onion is soft.

Add turmeric, green chilli and poha. Mix gently without breaking. Season with salt and sugar.

Cover and steam on low heat for 2 minutes. Finish with lemon juice.

Serve garnished with sev, coriander and fresh coconut. Best with piping hot jalebis on the side.
