Knead chhena until smooth. Add sugar, semolina, cardamom and mix well.

Grease a baking tin with ghee. Sprinkle 2 tbsp sugar on the bottom - this will caramelise into a crust.

Press chhena mixture into the tin. Top with cashews and raisins.

Bake at 180C for 50-60 minutes until dark golden on top and caramelised on the bottom.
